Salad Days

As Shakespeare had Cleopatra say "My salad days, When I was green in judgment"

Salad is my steady lunch staple. It's easy, fast, tasty, healthy, inexpensive, beautiful to look at and you can throw just about anything in there.
Today my box has little crunchy crispy sweet peppers, cashews, mixed greens, baby arugula, creamy gorgonzola and a pumpkin seed roll.


Adding any protein gives more bulk: use leftovers (like cold chicken) or fry up an egg, add cheeses (feta, swiss, mozzarella...pick a favorite). Nuts are another good source of protein, fats and minerals.
For more zip a quick vinaigrette or simple drizzle of olive oil and a squeeze of lemon brightens it up even more.
